The Best Authentic Mexican Salsa Quemada

Salsa Quemada – Burnt Salsa

This is the first Mexican salsa I’ve ever made, and it was a success! I would say this is one of the best and easiest Mexican Salsa ever. The contributor of this recipe is my husband Luis. This is his go-to salsa, and it goes with everything. It’s just so good! Especially, it’s great with Carne Asada, tacos, eggs, and of course chips! It’s definitely one of the most popular salsas at my party. I usually make this salsa and Salsa Verde (green salsa) for my Mexican-themed party. Actually, it’s even really tasty on a burger! It’s super easy to make and simply delicious! Once you make it, you will never go back to store-bought salsas.

Salsa and Chips

Ingredients

  • 2 Roma Tomatoes
  • 1/4 White or Yellow Onion
  • 2 Garlic cloves
  • 1 Serrano pepper, Jalapeño pepper would work too
  • Salt to taste

This recipe makes enough for two people. You definitely want to double it if you are making it for a party.

Let’s Make it!

Roast tomatoes, pepper, and onion. Put the roasted vegetables and the garlic in a molcajete (molcajete is a Mexican version of mortar and pestle made of stone). Grind until all the ingredients are mixed well. Add salt to taste.

You can also put all the vegetables on a broiling pan and broil them in an oven until they get charred or grill them on a BBQ grill if you happen to be grilling some meat or something.

Another easy way to do this is to wrap everything except for salt in a heavy-duty aluminum foil (or double the regular one) and make a little package. Put it on the stove and cook on low heat for 10 minutes or so, then turn it over and cook another 10 minutes until the tomatoes and pepper are nicely charred.

If you don’t have a molcajete, you can just use a regular blender. Even though I have it, I tend to use my bullet blender because I always have it handy and I can just throw the cup and the blade part in the dishwasher for easy cleaning…ha ha ha. I’m all for not doing extra work. The magic bullet blender is without a doubt one of my favorite kitchen gadgets! I use it to make all kinds of salsas, dressings, smoothies, and Aguas Frescas!
